How to Bake Ghanaian Rock Buns (Scones)

These buns are a delicious breakfast treat or the perfect anytime snack. Ingredients: 2 cups (254 g) all-purpose flour 1 stick (113 g)salted or unsalted butter, softened 1/2 cup (64 g) granulated sugar 1 Teaspoon (5 g) baking powder 1 large egg, beaten 1 Teaspoon (5 g) Vanilla or other extract, more if desired 1/4 cup (59 mL) milk Baking spray, preferably with flour in the mix Method: Preheat oven to 350 degrees Fahrenheit (177 degrees Celsius, Gasmark 4) In a medium mixing bowl, add flour and softened butter. Mix with fingers until grainy in texture. Add sugar and baking powder. Mix well. Add beaten egg, milk, and vanilla extract. Mix well. Spray baking tins, muffin pan with baking spray. Press dough into baking tins and flatten top. You can also make these on a cookie sheet without the baking tins. Simply line a cookie sheet with parchment paper and drop the dough by the spoonful in spaced rows. Brush tops with milk. Place baking tins or cookie sheet into preheated oven for 25 minutes. Enjoy!
