Making Fish Cakes in Barbados at the BUTTERFLY BEACH HOTEL with Frank Mazzuca | Family Style

We were given the 101 on fish cakes from Judy at the BUTTERFLY BEACH HOTEL - right next door to where we stayed on Maxwell. The staff were all fairly friendly and the service was good. The lunches and dinners are great an the Catch of the day BDS $24 which is tasty and great value, as is the Happy Hours where it's 2 beers for the price of one. The location is good. 2 lovely beaches. Close to Oistins for the friday fish fry and also 10 minutes on the bus to St lawrence Gap. We went there most evenings and would highly recommend. Try making these at home: Bajan Fish Cakes ½ lb salted cod fish, cooked and flaked 2 tbsp oil 1 cup onions, finely chopped 1 cup flour 1 tsp bak­ing powder 1 egg, lightly beaten ¾ cup milk 1 tbsp but­ter, melted 2 tbsp eschalots (finely chopped) 1 large fresh hot pep­per (finely chopped) In a heavy fry­ing pan, heat the oil and sauté the onions until they are just wilted. Place flour, bak­ing pow­der and salt in bowl. Make a well in cen­tre and pour egg, but­ter and milk. Mix together lightly, then add the onions, eschalots, salted cod fish, salt and pep­per. Stir well. Drop by table­spoon­ful into hot oil, but do not crowd the pan. Fish­cackes are done when golden brown! thanks for watching Frank Mazzuca | Family Style
