🔊🗣️ It was impossible to cut this video edit down to the 90-second limit of a Reel (just so that the @Instagram algorithm takes it into the Reelosphere), but for YOUR viewing enjoyment, here’s another on-camera #cooking segment put together completely off the cuff for the @OffTourWithErik television pitch, this time with jovial Chef François Graham, son of @The_Original_Fat_Boy_Jimmy Graham, who has taken over the kitchen at the beloved Jimmy’s The Original Fat Boy restaurant stand in Philipsburg—capital of the Dutch side of #SintMaarten.
St. Martiners pride themselves on specializing in grilled #chicken 🍗 and #ribs 🍖—which they do prepare at Jimmy’s, but they also make many of the classic #AfroCaribbean dishes like #currygoat and #oxtail stew. I lunched on a combination of both before François led me in a cooking lesson to make another quintessential recipe of #Afro-#Caribbean fare: #johnnycakes. After kneading (and fondling) balls, rolling out flatcakes, and frying them—#practicemakesperfect—I thoroughly enjoyed the fruits of my labor with a serving of ribs. #ribsihadribsforlunch — Time to make the johnnycakes, in #Philipsburg, #SintMaarten, #DutchCaribbean.
