Check every 10-15 minutes adding more water as needed. Throughout the process I used about 12 cups water. When the meat is 80 percent cooked, add in your potatoes. Cook for 20-25 minutes until potatoes and meat are fork tender. Taste for salt. You should have roughly 3 cups of gravy remaining. (Depending on your preference, you can remove the cover, increase the temperature to medium, and let it dry down for about 5 minutes. Make sure you stand by and keep a close eye on the pot during this process.) Serve over rice or with hot roti. Enjoy!
