St Lucia Cusine — The art of cassava

Our neighbors in Choiseul, St Lucia, set us this video of them making cassava. Here Nigel, Steven, and Eugene are hard at work at roasting he dried and grated cassava root to get it ready to make some delicious gluten free bread or cakes. This is the traditional way of making flour or cereal. It takes a bit of work, a good fire, and a good roasting pan but the result is like magic.
